Is ultra-processed food addictive, or is that the wrong word for it?

Addictive, and the industry benefits from the argument staying open

What it rests onNutrients 2020, a sole-authored review arguing the case by analogy to tobacco, alcohol and opioids. Followed by Frontiers in Psychiatry 2025, which enumerates the eight standard objections (you need food to survive, stigma, personal responsibility, incomplete data, correlation not causation, universal exposure with non-universal addiction, no withdrawal phenotype, eating rather than food addiction), reviews which foods are most likely to be addictive, sets out two candidate mechanisms, and argues the food industry has promulgated false narratives to keep the question open.

The drug-like mechanism was not detectable, and that matters

What it rests onFifty healthy adults across BMI 20 to 45, [11C]raclopride PET displacement, the same method used for drugs of abuse. Postingestive striatal response p = 0.62, no subregion p < 0.33, adiposity correlation not significant. The authors state the responses are 'likely substantially smaller than many addictive drugs and below the limits of detection using standard PET methods'.

Overview

Hall's participants were healthy adults drinking a milkshake in a scanner, which is the cleanest available test of one specific mechanism and the least like a person eating a family-size bag of something at eleven at night.

Lustig's case is built on population demographics, biochemistry, animal work and clinical presentation rather than on a single mechanistic assay, and he says explicitly in the 2025 paper that no single line of evidence has been a slam dunk. Neither is describing the other's evidence base.

Where they agree

More than the framing suggests. Both agree that ultra-processed food drives overeating; Hall ran the trial that measured it. Both agree the mechanism is unresolved. Both agree that the answer has policy consequences.

Lustig's own 2025 abstract concedes that arguing individual food substances meet addiction criteria 'appears to be a stretch by some scientists' and that the delineation of mechanism is what acceptance requires, which is precisely what Hall's null bears on.

What would settle it

For Lustig, a mechanism: he names its delineation as the thing scientific acceptance now requires, so a replicable neurobiological signature would settle it in his favour. For Hall, a positive finding with a method sensitive enough to detect an effect smaller than a drug's, which his own paper implies is the open question rather than a closed one. Both would accept the same study.
